I Hækken was produced by distilling apple cider to around 70% VOL. then “watering that down” to 40% by blending in barrel aged apple cider and fresh juice from organic Danish Filippa apples. Not quite an apple brandy, not quite a calvados and not quite an aquavit. This the spirit of Æblerov condensed into I Hækken. Delicate notes of deep, dark apples, cedar wood, honey, leather, tonka bean and nutmeg.
